I enter all my appointments into Outlook, whenever I come back to my computer
I have a little reminder message that my appointments are overdo, but I can
never find an option where I can mark the appointment as completed.  I don't
want to just delete them because sometimes I need to know what day I did what
and when.

Outlook has no concept of a "completed" appointment. It either happened or
it didn't. If it didn't, you might as well delete it. Or you could
categorize it or put a color label on it.
