Outlook should let me set a date/time to turn on Out of Office As.

Product Enhancement Suggestion:
Give similar capability to the Out of Office Assistant as that for delaying
the sending of messages with a "Turn OOOA on at date/time".  This would be
beneficial when vacations are planned and you may not return to your office
or remember to turn on the OOOA before leaving.  Since the message appears
that OOOA is on when you activate Outlook, a cancel date/time would not be
needed.

Perhaps related and would supplant your suggestion, Outlook 12 may include
the option to turn on the Out of Office Assistant depending on how you have
your appointments set (busy, out of office, free, etc.)  It is a feature
that is being considered.

I am agreeing with Milly and hope Microsoft will bring this function of
tighing-in Outlook out of office with the calendar, depending on the
Appointment Options.
This would be very efficient and practical in a office environment.
