Looking for a way to block double booking in my calendar. If I block out time
as busy I don't want people to be able to schedule anything for that time.

Is that possible?

No, you cannot stop people from booking your time when you are busy.  You
can, however, set your calendar to automatically decline conflicting
appointments.
