I've "fixed" my resolution to the maximum my card will display (1280 x 1024),
moved the toolbars (standard) off the top of the Outlook pane, and disabled
the status bar (bottom). The problem is there are still more "All Day
Events" than my monitor will display.
What is the fix for this? My users need to be able to see all 30+ items
listed, but most can only see 15 or so.

There is no "fix" - it is dependent on the monitor display.
