For some reason - about a month ago, every calendar entry that is set with a
reminder is popping up every Monday morning.  Does anyone have an idea why?

It sounds like your boss' Reminders data has become corrupt. If that's the
case, using the /cleanreminders switch should fix it. The following article
on the Microsoft KB talks about that, and the other command switches
available with Outlook:

http://support.microsoft.com/kb/296192

Good luck!
