How can I set up a meeting and allow the recipients to be able to.

I would like to be able to set up certain meetings on the same day and give
the attendees the choice of which meeting they will attend.

You would need to send separate meetings and have them accept the one that
they wish to attend.  There is no automatic method for this - perhaps
preface it with an email telling people what is required "accept one, reject
the others."
