how do i change layout to Outlook 2003 Contact Form?

I would like to add custom fields to store the types of vehicles a customer
buys. and add these fields to the main contacts form. and Apply these setting
to all existing contacts in a specific catagorie.

I don't know how to change the layout and apply it to other existing
contacts.
