Hello,
Does anyone know how to set your Outlook 2002 contacts to collect all
senders e-mail addresses when you open an e-mail?

You really want to do that?
No, and it's a bad idea. You can use code to configure Outlook to
automatically add recipients to your Contacts Folder if you want:
