This is driving me nuts.
I'm sure it's an easy fix, but I can't find it.

When I'm sending a new message, and I click on the
To:  and then bring up "Contacts", I can't get the
names to display Last, First.  They come up as  First Last.
I'm using Outlook 2000.

You need to post your mail support mode when you ask questions.
Depending on your version and mail support mode of Outlook, you can sort the
Outlook Address Book this way (check for your mode on the second line of the
Help menu > About):

97, 98/2000 in Corporate/Workgroup mode:
Tools menu > Services > Highlight the Outlook Address Book service > Click
Properties > Set sort order

98/2000 Internet Mail Only:
Tools menu > Address Book > View menu > Sort by

I'm sorry.  I screwed up.
I have Outlook 2002/XP.

And I can't find any reference to Mail Support Mode in Help/About.
Security Mode is "Default"
I'm connecting to an Exchange 5.5 Server.

And I'm still beating myself senseless trying to get these names to
appear Last, First.

Outlook 2002 has only one mode.
Go to Tools > E-mail accounts > View or change existing directories or
address books > Outlook Address Book > Change. > Set your sort order there
