Display difference - Contacts and GAL

I can't find this answer anywhere, but I have to believe
one exists. All help appreciated....
If I open a new mail, choose a name from my Contacts, and
click "To", the displayed name is the person's email
address, not their name. If I choose from the GAL, it
correctly shows the displayed name. I don't know why they
would purposely be different. I've searched options
completely and can't find the reason.

Help!

Adding to the thread, I now understand that the current
format of Display Name is causing the problem, but how
did they all change from previous versions, and how do I
get them back en masse?
