When attempting to address envelopes or letters in WORD using OUTLOOK
contacts, only the contacts that have an E-mail address show up in the list
when I click on the address book.  I can insert a fake email address for the
contact and it will show up.  There must be a setting that allows me to use
any of the contacts whether or not they have an email address, but I haven't
been able to find it.

Something is wrong with your setup. You'll need to provide information for
anyone to help you. Include:
Outlook and Word versions
How you installed. If it was an upgrade, over what version/mail support mode
How your Outlook Address Book is configured.
