Contact Editing Frustration

One of my contacts lists its E-mail Type as FAX and I want to change that to
SMTP instead.

So, I go to into the contact detail and select the All Fields tab. But I
can't for the life of me figure out how to make Outlook allow me to edit the
name/value pair.

Help!

Open the contact. Delete the fax number on the main page. Add an email
address. Save the contact.
