If I create a sub-list of contacts (e.g. "holiday cards contact list") under
my master contacts in Outlook, how can i set it so that if I make a change to
the contact in my master list, it will auto-replicate to my sub lists?
Thereby making it unnecessary for me to make phone/address/email updates in
multiple places?

Anyone?

You can't do that with subfolders.
That's why we use categories instead.
