I like the outlook express address book format which allow me to set a
default email to show in address book. It seems I can't find that option at
outlook 2003 contacts or outlook 2003 address book. If I have more than 1
emai setup for that user, the address book will show them all which is a
little bit confused.

No such option. Behaving as designed. The majority of Outlook users prefer
to have access to all of their Contacts' electronic addresses, not just one.
