I have an invididual on my contact list who has more than one e-mail account.
When I go to New Mail Message, it pulls the names of my contacts.

Without adding a new contact display name, how can I modify the existing
diplay name, so that every time I choose that individual, even though I see
the name in the "To" field, it will always send to his/her multiple e-mail
accounts.

That would depend on your Outlook version, which you did not post. You
cannot alter the display name. You can resize the Outlook Address Book view
or scroll it to distinguish one address from another, depending on your
version.

I am using Outlook 2000. If one person has two or more e-mail accounts, can I
combine the e-mail accounts and have one display name so when I choose the
display name, it will send to the same person at of his/her e-mail accounts?

I'll assume you mean email addresses.
You can create a Distribution List containing each of the Contact's email
addresses.
