I want to be able to bring all of my contacts that are in a category into one
Distribution List in my Outlook Contacts so I can send emails with one click.
Is there a shortcut or do I have to load each one individually?

You can do it, but the question is why do you need to? DL's are fragile and
buggy. They cannot be updated reliably.
You can easily send an email to all the members of a category. Just select
the Category > Actions > New Message to Contact.

Open your Category View, select the Category that you want to send to, and go
to Actions -  New Mesage to Contact, and there you go...
