I know I can add additional date fields for my contacts, but I have not been
able to have these important dates show up on my Outlook Calendar.  It
certainly would be nice to have a Reminder pop-up for a spouse's or child's
birthday.  Can this be done?

It can be done if you create separate records for the spouse and child.
Othewrise, no.
