I have been adding birthdays for those people that I know and have found you
can enter a date in years past; found I was born on a Saturday if Outlook is
correct. I cannot find an 'Age' field and wonder, if there was an age field
could it tell me how old the person is each year on their birthday. Useful
for keeping track of children; being a man I won't remember how old they
are.

You can either use the method described at
http://www.slipstick.com/contacts/calcage.htm or you can do what I do -- add
the year of birth in square brackets at the end of the subject of the
appointment.  For example, "Joe Schmoe's Birthday [1956]".  I use square
brackets instead of parentheses because when I use parens, Outlook thinks I
am adding a location to the appointment and it puts the year in the Location
field for me.
