How do I change existing contacts from the default form to a new .

I have created a new contact folder and designed a form, containing new
fields, which I would like to use for my clients details. How can I copy my
existing contact details into the new folder and have them appear using the
new form?

Ctrl+drag the contacts to copy them. To make them show the new form, you
need to change the MessageClass on the existing items to point to your new
form's class. See http://www.outlookcode.com/d/newdefaultform.htm#convert 
for several tools and scripts to accomplish this.
