Sorting View in Address Book

Although my contact list is sorted the way I want it (Last Name, First Name)
... the address book that is called up in email is sorting by full name (Mr.
John Smith) alphebetizing first by the prefix "Mr," and then by first name.  
How can I change the sort/view order of the address book???
