How can I change the way a contact "full name" is processed?

When a new contact is entered, it appears that the first name and middle name
are determined at least in part by the length. How can I change this so that
a middle name is not used and all word prior to the last name are considered
to be first names?

Post your Outlook version. Post your default setting for the Full Name
field.
Support your theory. It is unclear what makes you think Outlook behaves that
way. I've never seen anything like it.
