How can I set Outlook to not put the e-mail address in Display Na.

I just moved from Outlook 2000 to Outlook 2003. Now the 'Display As' field
for all my contacts includes the e-mail address. I don't want that, and
surely don't want to manually change it for every entry. Is there a global
way to do this?
