Never overwrite a PST file. Overwriting a PST file will corrupt your
Profile.
Importing a PST will lose data and may also corrupt your profile.
Read the instructions for migrating Outlook data. They also apply to Outlook

The solution was to delete the address book from my email account. For some
reason the next time I started Outlook a new address book was created with
the information from my old Contacts folder.

Removing and re-adding the Outlook Address Book will repair the connection
between that Service and your Contacts Folders. If you're lucky, that will
be the only thing that got corrupted.
