Where in the contact information do I enter the sex of the contact so
that when I merge to a Word document, the salutation chooses the correct
title (Ms. or Mr.)?

Just enter the name including the salutation in the name field, eg "Mr. John
Smith". Alternatively, enter the salutation directly by clicking on the "Full
Name" button and either typing in the salutation or using one from the menu.
Also available under the "Details" tab.

In the contact form, press the button that says "Full Name".  "Title"
is the field that you want.  If you use that field for other purposes,
you might want to create a custom field, but I understand that custom
fields can't be used directly for mail-merge.

I knew there was a way to do it. Thanks.
