I want to save email addreses automatically (i.e. messages I reply to, or
every one I receive, if I want that) rather than entering them all manually
into the address book or contacts. Outlook express does this, but I can't
find it on Outlook Office....

No one would ever want to save the address of every sender automatically.
Such a feature does not and should not exist.
How to save the address of every recipient automatically depends on your
version of Outlook which you did not post.
