I want to make lists of contacts by city or zip. I know these fields exist
behind the "address" block but I can't access them to use them as a sort
field.  Any ideas?

Can't you just use Field Chooser to add them to any list view of your
Contacts?

The list view you need is Phone List - now you'll have a table and can
manipulate the columns, grouping etc.  You can Group By city or State or Zip
if you want to.

Turn on the Advanced toolbars and use the field chooser and group by box!
