how do Istop new email adresses from appearing in my contacts?

when I recieve an email, why does the address automaticly go into my
contacts?  I have so many duplicats beacuse people have 2 or 3 email
addresses they use

You are mistaken. No version of Outlook would ever add sender's addresses to
your Contacts automatically.
Clarify what you mean. Current versions will add recipient addresses to your
autocompletion cache, but not to your Contacts.
