In-coming messages show names instead of e-mail addresses

I have a book of business with over 1000 owners with whom I corrospond
frequently.  Many times, my owners send me messages that arrive with an email
address in the 'from' field instead of a name.  I have gone into their
contact card and set up the display name and I have opened the 'properties'
of thier e-mail address and changed the display name on the message, but new
messages keep coming in displaying the address and not the name.  How can I
make the change permanent?

Let me make sure I understand. You are expecting the recipient email program
to change the address format that the sender specified?
