delete Display Names from sent e-mails

When you select an address from the Address Book, it shows on the e-mail
header with BOTH the name and then, in parentheses, the actual e-mail
address.  How can I eliminate the stuff in parentheses, leaving just the name
on display?

Change the Display As field for the Contact.
