How do I stop Outlook from converting sent e-mail to contacts?

Whenever I manually type a new e-mail address in Outlook's send line, somehow
that e-mail address is being added to my Contacts.  This has only recently
started to occur.  Why is this happening, and how can I stop it?

No current versions of Outlook do this.
State your version.
State your evidence that these addresses are being added to you Contacts
