How do you keep emails from being archived that you have connected to contacts?

You'd have to set the property on either the individual pieces of email or
on the folder containing them

The only option I see is to archive (and if so how often) or not archive.  So
that means I have to save everything in order to keep the email
correspondences that I want that are related to my contacts?  There's no way
to keep a copy forever for only those correspondences linked to a contact?

Well you can try to use a rule to move things that come from people in your
Contacts folder to a special folder. Set the archive properties on that
folder to never archive. See if that fits the bill.
