I need to customize the form for my Contacts to include some additional
fields. When I add user defined fields, and try to search for one of the
values I've entered there, the search returns no results. How can I include
these new fields in a search, so that I can sort my entries by these values?

Advanced search allows you to search on user-defined fields.  Find it
under 'Options' in the Contact Search tool bar.
