Overwrite e-mail filed in Outlook contact

Is there a way to overwrite e-mail, Categories and notes fields when we copy
or move contacts in outlook?

Overwrite them with what? When you move or copy an item all its data gets
copied or moved.

I want to copy a contact from a folder to another folder. I want just to
replace e-mail and Categories fields.

I don't want to have e-mail2 fielad with the copied contact when I update.

I don't think you can do that without code in Outlook. As I mentioned a copy
is just a copy with no concern for changing data & such
