Use the Categories button at the bottom of an open contact. Or, in a folder view, select the contacts you want to change, then right-click and choose Categories.

To do a single Contact then open the Contact and in the bottom right click
on the Category button, to do a selection of Contacts then change the view
to Category, use the Shift or Ctrl key with the left mouse click to select
the Contact then right click and select Categories.
