How can I stop FAX numbers from displaying in my email contact lis

I have made my contact list complete with phone numbers, Fax numbers and
Cells. However, the fax numbers display when I use my contact list within an
email.
How can I stop FAX numbers from displaying in my email contact list?

Add an alphabetic character to the fax number in the contact records to
obscure the numbers from the address book
