Scenario:
Outlook 2003, Exchange 5.5
User quits, new user hired. All of old users contacts are exported and
imported into the replacements contacts.
Problem:
When I double click on a imported contact in the new users contacts folder
on the M: drive, it shows the "From" field as the old user. Double clicking
the the contact brings up Outlook Express on the server. Any contacts the new
user created herself have the correct name in the "From" field.
The user is having problems with email intermittently, sometimes the
recipient is not receiving the sent email.
Is the above the cause of her intermittent email problem? Is using a contact
from the former user with the former users name in the from field going to
affect the way exchange is handling email?

Outlook Express is the default program for .eml fiiles. Maybe a dumb question, but why are you using the M: drive rather than examining the contacts in Outlook as a user would?
