Several of my contacts have multiple email addresses. When I perform the
action to create a new email with a category, the final list only includes
the first email address and not email2 and email3. Is there any way to
capture all the email addresses for each contact? Thanks.

Not when sending to a category. You'd have to create separate Contact
Records for that.
