Missing Contacts and Display Names in Distribution Lists

When I add more contacts to a distritbution list, the original names that
were already in the distribution lists are now missing.  What am I doing
wrong?

How do I remove the e-mail address within the display name?  For example, I
want Joe Smith (joesmith@hotmail.com) to show as Joe Smith with no e-mail
address.  I have removed the e-mail address in the display name field but the
e-mail address is automatically added to the name again.

It is hard to know what you are doing wrong when we don't know what you are
doing. Spell it out in detail, step by step. We can't see what you're doing,
nor can we tell what Outlook version you are using.
