I find myself frequently and unwittingly editing my Outlook Contacts when I'm
in Address Card View, because I start to type a contact's name to Jump to
that contact, but find that the cursor is in a field of the Address Card and
thus proceeds to edit it.
Can I TURN OFF field editing in Address Card View?  Or otherwise protect the
Address cards from being altered this way?

If you go from the View Menu and into Customize Current view and choose
Other Settings see if deselecting "Allow in cell editing" helps
