I would like to categorize the e-mails I receive to aid subsequent retrieval
but this is a real chore. As my e-mail contacts are fairly stable and as it
is possible to categorize contacts, it would be nice, as an option, if each
e-mail sent or received would automatically be categorized according to the
sender/recipient.

Outlook can do that with rules. Choose Tools | Rules and Alerts.
