You can't. They get stored in the Contacts folder in your default message
store (in your case, your mailbox)

For Outlook 2003, the Save button will store the new contact in whatever
Contact folder you're in when you click New>Contact or in your default
Contacts folder, if you're not in any Contacts folder.

It works the same way in all versions of Outlook BTW.
