Set the priority for an individual contact

Is there a way that I can set the priority for all e-mail messages to a
specific contact?
I know how to do this for an e-mail message and for my default.

Please advise, thanks.

Have you looked at the Rules Wizard?  Start from a blank rule and see what's
possible (in your version) with emails you send.
