how do I change the default fields in a contact card

I am trying to add new fields into the default contact card so that when I
import from excell the fields will be available.

Outlook doesn't support importing to a custom form. You'd have to write custom code or use a third-party application. See http://www.outlookcode.com/d/customimport.htm.
