How do I mail merge using only one category?

I am trying to produce a mail-merge label in Word 2003 using only the
contacts from one category in my Outlook contacts list, but I don't seem to
be able to filter the contacts in that way before importing them into the
Word label document.

Start the merge from Outlook, not Word.
