archiving seldom-used contacts

Hi, everyone. Can you suggest a way of archiving contacts so I can still get
to them fairly easily but they don't keep appearing in my unfiltered list?

I know I can attach a category to these contacts but that doesn't allow me
to exclude them as such in a filter.

What I'm trying to achieve is tagging them in some way that they don't
display with 'all contacts' . I don't understand the archiving process well
enough to be able to move them somewhere out of the way but so I can still
reference them easily without a long de-archiving process.

I even thought about putting them in an excel sheet somehow - would that
work?

should have said - Outlook 2003
