I've never seen a bracket in phone numbers.  I have seen parentheses,
however.

If you don't want to see the parentheses, then you must MISconfigure your
Windows dialing properties in the Phone and Modem applet of Control Panel.

Well, if your Windows dialing properties are correctly configured, then
Outlook will use that information to format the phone number display.  Thus,
if you want Outlook to NOT format the phone number display, then you'll have
to misconfigure the Windows dialing properties (i.e., no area code, etc.)
