I have 8 different catagories set up under contacts.  Some of the individual
contacts have mutiple catgories, such as peronal and Holiday cards.  I want
to combine those into one new catagory called personal and holiday cards.

Nothing I do, short of moving them one at a time will accomplish that task.
Then I want to print just Holiday cards by itself through mail merge in Word.
How will I separate the two catagories so that I print just the Holiday
cards.

Show the Contacts Folder in By Category view.

Select all the people you wish to change the Category of and right click,
Categories, check and uncheck the Categories to be what you want for those
selected people.  It will adjust all of them at once.
