I have two e-mail addresses for one contact. When using "New Message to
Contact" I get a new e-mail but with both e-mail addresses in the TO line.
Can I set the contact so that it only uses one e-mail address instead of two.
Some contacts have 3 e-mail addresses which means I always have to delete two
e-mails I do not want.
Is there any way around it?

Not with that method. If you only want to select one address, use the
Outlook Address Book to select the recipient.
