The link to Activities will not persist in a vCard. Think for a minute. They
are linked to items in your folder, not the recipients. How could they see
anything?

Your right - Understand - I looked at a vcard with Notebook and nothing was
there. However, is there still a way to stop recording all this in
activities on my PC?

There's nothing recorded. This is a dynamic list created each time you go to
the Activities Tab.
Just don't go to the Activities Tab.

What if my pc is unattended and someone else opens my contacts and the
activities file and sees all of the links, and finds information they
otherwise would of had to search for hours to find? I really dont like this
and think it should be optional.

This is an end user problem, not an Outlook problem. Allowing others
unfettered access to your data is your choice, not Outlook's.
You can easily reset the options for the Activity Tab in the Properties Tab
for a Folder. But of course, anyone with unfettered access to your data
could reset it.
I must be missing something here. Do you really expect Outlook to
inconvenience everyone to make all of its search functions optional just
because you might forget to secure your data?
