I am looking for a way to change the field name when you
add a new contact.  When I add a new contact, I can enter
all of their info under the General tab, but under the
Detail tab there is a field for Anniversary, is it
possible to change that so it says "Spouse's Birthday"
instead?  I know that I can create this field by creating
a form, but I also need to be able to be reminded of this
date and so was just wanting to change the name of that
one field.

You cannot change the name of any built-in field, nor can you customize the Details page to change the label for that field.
